Ok, I'll start.
Jack Twist was murdered. I believe this to be the case mainly because of Lureen's cold, rehearsed account of what had happened to him. It was almost uncaring, though later during her phone call with Ennis we see that she is in fact devastated. She doesn't say what had really happened because it is shameful.
Jack Twist quit Ennis. I've been going back and forth on this one. I don't think he ever quit him 100%, but in the end I do believe that he (very reluctantly) quit him more than he did not, if that makes any sense. See he was having an affair with his "second choice" Randall behind Ennis' (not to mention Lureen's*) back, which is hinted at when Randall tells Jack at their first encounter that they "should go fishing sometime." Later, after Jack's death, Ennis finds out from Jack's parents that Jack was planning on moving up to the ranch with Randall instead of Ennis. Now depending on how long he was merely considering doing so determines whether Jack gave up hope that Ennis will come around. That part isn't clear, as is much of the end of the movie.
*I also suspect that Lureen or someone else caught them, possibly resulting in Jack being murdered.
To those for whom I had accidentally spoiled this already: please don't let it deter you from seeing this movie. The part where Jack dies is completely devoid of any kind of suspense and is not at all the focus of the experience. You will be heartbroken seeing what it does to Ennis even if you know it will happen ahead of time, trust me. You can see it at alluc.org and/or tv-links.co.uk. I highly recommend that you do if you haven't yet.
